做法(fǎ ):春笋(sǔn )切成片后加(jiā )少(shǎo )许(xǔ )盐捞出(chū )后用清水(shuǐ )浸泡(pào ),生姜切片,葱切(qiē )成(chéng )段(duàn )。锅烧(shāo )热,倒入(rù )2勺油,放(fàng )入生姜、春笋、牛(niú )肉片、葱段翻(fān )炒(chǎo )1分钟(zhōng )左(zuǒ )右(yòu )。再(zài )加入生(shēng )抽、老(lǎo )抽(chōu )、蚝油(yóu )翻炒均匀,加(jiā )入少量清水半(bàn )掩住(zhù )春笋(sǔn ),盖(gài )上锅盖大火煮开后转中火。煮到水快熬干的时候加入(rù )盐(yán ),翻(fān )炒均匀(yún )稍收汁时盖(gài )上锅(guō )盖焖(mèn )。
