做法:春(chūn )笋切成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切(qiē )片(piàn ),葱切成段。锅(guō )烧热(rè ),倒入2勺油(yóu ),放入(rù )生姜(jiāng )、春(chūn )笋、牛(niú )肉片、葱段翻(fān )炒1分(fèn )钟(zhōng )左右(yòu )。再加入生抽、老抽(chōu )、蚝油翻(fān )炒均(jun1 )匀,加(jiā )入少(shǎo )量(liàng )清(qīng )水(shuǐ )半(bàn )掩住(zhù )春笋(sǔn ),盖(gài )上(shàng )锅盖大火煮(zhǔ )开后转中火。煮到水快熬(áo )干的时候加(jiā )入(rù )盐,翻(fān )炒均匀稍(shāo )收汁时(shí )盖上锅盖(gài )焖。
