做(zuò )法(fǎ ):洗(xǐ )净(jìng )宰好(hǎo )鲫(jì )鱼,洗(xǐ )净淮山和薏米。用清水把陈皮(pí )泡软,拍裂一小块姜,热锅,用姜块在锅上擦一遍,放两勺油,待油(yóu )六成热(rè )下鱼,煎至微黄(huáng )。煮(zhǔ )沸瓦煲里的(de )清(qīng )水,放入(rù )煎(jiān )煮(zhǔ )好的鲫鱼(yú )和(hé )其(qí )他(tā )材(cái )料,武(wǔ )火(huǒ )煮沸(fèi ),转(zhuǎn )中(zhōng )小火煲一个半小时(shí ),下盐调(diào )味即可(kě )品尝。
