做(zuò )法:洗净宰好鲫鱼,洗净淮(huái )山和(hé )薏(yì )米。用清水把(bǎ )陈皮泡软,拍裂(liè )一小(xiǎo )块姜,热锅,用姜块在(zài )锅上(shàng )擦一遍,放两勺油,待油六成热下鱼(yú ),煎至微(wēi )黄。煮(zhǔ )沸瓦煲里(lǐ )的清水,放入煎(jiān )煮好(hǎo )的(de )鲫鱼和其他材(cái )料,武火(huǒ )煮沸(fèi ),转(zhuǎn )中小(xiǎo )火煲一(yī )个(gè )半(bàn )小(xiǎo )时,下盐调味即(jí )可(kě )品尝(cháng )。
