做法:春笋切成片后加少许(xǔ )盐(yán )捞出后(hòu )用(yòng )清水浸(jìn )泡,生姜切(qiē )片,葱切成段(duàn )。锅烧热,倒(dǎo )入2勺油(yóu ),放入生姜、春笋(sǔn )、牛(niú )肉片、葱(cōng )段翻(fān )炒1分(fèn )钟左右。再(zài )加入生(shēng )抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入(rù )少量清水半掩(yǎn )住春笋,盖上锅(guō )盖大火煮开后转(zhuǎn )中(zhōng )火。煮到水(shuǐ )快熬(áo )干的时(shí )候(hòu )加(jiā )入盐(yán ),翻(fān )炒均匀稍收汁时(shí )盖上锅(guō )盖焖。
