做(zuò )法:洗(xǐ )净(jìng )宰好鲫(jì )鱼(yú ),洗(xǐ )净淮山和薏米。用清水把陈皮泡(pào )软,拍(pāi )裂(liè )一(yī )小块姜,热锅,用姜(jiāng )块在(zài )锅上擦一(yī )遍(biàn ),放两勺(sháo )油(yóu ),待油六成热下(xià )鱼,煎至微(wēi )黄(huáng )。煮沸(fèi )瓦煲(bāo )里的清水,放入煎(jiān )煮(zhǔ )好(hǎo )的鲫鱼和其他材(cái )料,武火煮沸,转中小火煲(bāo )一(yī )个(gè )半(bàn )小时,下盐调味即可(kě )品尝。
