做法:春笋(sǔn )切成片后加少(shǎo )许盐捞出后用清水浸(jìn )泡(pào ),生姜切片,葱切成段。锅烧热(rè ),倒入(rù )2勺(sháo )油(yóu ),放入生(shēng )姜(jiāng )、春笋(sǔn )、牛肉片、葱段翻(fān )炒(chǎo )1分钟左(zuǒ )右。再(zài )加(jiā )入(rù )生抽、老(lǎo )抽、蚝油(yóu )翻炒(chǎo )均匀(yún ),加入少量清水半掩(yǎn )住春笋,盖上(shàng )锅(guō )盖(gài )大火煮开后转中(zhōng )火。煮到水快(kuài )熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上(shàng )锅(guō )盖焖(mèn )。
