做法(fǎ ):春(chūn )笋(sǔn )切成(chéng )片后加少许(xǔ )盐(yán )捞出后(hòu )用清水(shuǐ )浸泡,生姜切片,葱切成(chéng )段。锅烧热(rè ),倒入2勺(sháo )油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分(fèn )钟左右。再(zài )加入(rù )生抽、老抽、蚝(háo )油(yóu )翻(fān )炒均匀(yún ),加入(rù )少量清(qīng )水半掩住(zhù )春笋,盖上(shàng )锅(guō )盖(gài )大火煮开(kāi )后转(zhuǎn )中火(huǒ )。煮(zhǔ )到水(shuǐ )快熬干的时候(hòu )加(jiā )入(rù )盐,翻炒均(jun1 )匀稍收汁时盖上锅盖焖。
