做(zuò )法:春笋切(qiē )成(chéng )片后(hòu )加少(shǎo )许盐(yán )捞出后用(yòng )清水(shuǐ )浸泡,生姜切(qiē )片,葱切成段。锅(guō )烧热,倒入(rù )2勺(sháo )油,放入生姜(jiāng )、春(chūn )笋、牛肉(ròu )片(piàn )、葱(cōng )段翻炒1分(fèn )钟左(zuǒ )右。再加入生抽(chōu )、老抽、蚝油翻炒(chǎo )均匀(yún ),加(jiā )入(rù )少(shǎo )量(liàng )清水半掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水(shuǐ )快熬干的时候加入盐,翻炒(chǎo )均(jun1 )匀稍收汁时(shí )盖(gài )上锅盖焖(mèn )。
