做(zuò )法(fǎ ):洗净宰(zǎi )好鲫(jì )鱼,洗净淮山和薏(yì )米。用(yòng )清(qīng )水把陈(chén )皮泡软,拍裂一(yī )小(xiǎo )块(kuài )姜,热锅(guō ),用姜块(kuài )在锅上擦一遍(biàn ),放两勺油,待油(yóu )六成热下鱼,煎(jiān )至微(wēi )黄。煮沸(fèi )瓦(wǎ )煲里的清水,放(fàng )入煎煮(zhǔ )好(hǎo )的鲫鱼(yú )和其他材料,武火(huǒ )煮沸,转(zhuǎn )中小火煲(bāo )一个半小(xiǎo )时,下盐调味(wèi )即可品尝。
