做法(fǎ ):洗(xǐ )净(jìng )宰好鲫(jì )鱼,洗(xǐ )净淮山和薏米。用(yòng )清水(shuǐ )把陈皮(pí )泡(pào )软,拍裂(liè )一(yī )小块姜,热(rè )锅,用姜(jiāng )块在(zài )锅上擦(cā )一遍,放两勺(sháo )油,待油六成热下鱼,煎至(zhì )微黄(huáng )。煮沸瓦(wǎ )煲里的清水(shuǐ ),放入煎(jiān )煮(zhǔ )好的鲫鱼和其他材料,武火煮沸(fèi ),转中(zhōng )小火煲一(yī )个半(bàn )小(xiǎo )时(shí ),下盐调(diào )味即可(kě )品尝(cháng )。
