做法:洗(xǐ )净宰好鲫(jì )鱼(yú ),洗净淮山(shān )和薏米(mǐ )。用清(qīng )水(shuǐ )把(bǎ )陈(chén )皮泡(pào )软,拍裂一(yī )小(xiǎo )块姜,热锅(guō ),用(yòng )姜(jiāng )块(kuài )在锅(guō )上擦一遍,放两勺油,待(dài )油六成热(rè )下鱼,煎至微黄(huáng )。煮沸瓦煲里(lǐ )的清水(shuǐ ),放入煎煮好(hǎo )的鲫鱼(yú )和其他材料(liào ),武火(huǒ )煮沸,转(zhuǎn )中小火煲一个(gè )半(bàn )小(xiǎo )时(shí ),下盐调味即可品尝。
