做(zuò )法(fǎ ):洗净宰好鲫鱼(yú ),洗(xǐ )净(jìng )淮山和薏米。用清(qīng )水把陈皮泡(pào )软(ruǎn ),拍(pāi )裂一(yī )小块(kuài )姜(jiāng ),热锅,用姜块在(zài )锅(guō )上(shàng )擦一遍,放两(liǎng )勺油,待(dài )油六成热(rè )下鱼(yú ),煎至(zhì )微(wēi )黄。煮(zhǔ )沸瓦(wǎ )煲里的(de )清(qīng )水,放入煎(jiān )煮好的鲫(jì )鱼和其他材料,武火煮沸,转(zhuǎn )中小火煲(bāo )一个半小(xiǎo )时,下盐调(diào )味即可(kě )品尝。
