做(zuò )法:春笋(sǔn )切成片后加少许(xǔ )盐(yán )捞(lāo )出后用清水浸泡(pào ),生(shēng )姜切片(piàn ),葱切成段。锅(guō )烧热,倒入2勺(sháo )油,放入生姜、春笋、牛(niú )肉片、葱(cōng )段翻炒(chǎo )1分钟左(zuǒ )右(yòu )。再(zài )加入生抽、老抽、蚝(háo )油翻(fān )炒(chǎo )均匀,加入(rù )少量(liàng )清水半(bàn )掩住(zhù )春(chūn )笋,盖(gài )上锅盖大火(huǒ )煮开后转(zhuǎn )中(zhōng )火(huǒ )。煮到水快熬(áo )干的时(shí )候(hòu )加入盐,翻(fān )炒均匀稍收汁时(shí )盖上(shàng )锅盖焖。
